Salmon Turmeric Stir Fry

After being vegan for about four years, I’ve started incorporating fish into my diet every so often. It’s been a weird shift, but I’m grateful to open up my options a bit, and get the wide range of nutritional benefits that salmon has to offer.

This recipe was inspired by a stressful day dealing with stupid crap, and my commitment to myself to not eat crappy food in response. You know that moment: When you’re upset and can easily justify pretty much anything, but then decide to be the bigger girl and make a mature decision? Feels good…almost as good as this recipe tastes.

The beauty of this little creation is that it’s quick, and also loaded with anti-inflammatory benefits. That’s part of why I love turmeric! It’s so pretty yellow, and also offers a ton of medicinal bonuses.

Ingredients ~ Enough Salmon Stir-Fry for two, but I ate it all myself. Let’s be honest.

1 tsp coconut oil

1 tbsp gluten free, low sodium tamari

1/2 organic yellow onion

2 cloves of garlic, finely chopped

pinch of rock salt (I was in a salty mood)

1 1/2 cups of broccoli florets

1 cup of cauliflower florets

small fillet of cooked wild salmon (or you can use a high quality canned version if you’re in a pinch)

1 tsp turmeric

cracked pepper

lemon wedge (because where there’s salmon, there should be lemon)

Instructions ~ 

Melt the coconut oil in a frying pan at low-medium heat, and sauté your onions and garlic until soft. Throw in the chopped broccoli and cauliflower. Artfully sprinkle your tamari and turmeric atop the mixture, and toss it all together like a pro.

Make sure to consistently flip, toss or turn so the turmeric doesn’t burn. Well, obviously you don’t want anything to burn, but especially not the precious turmeric.

After about 5 minutes, when the veggies are still crisp, and the broccoli is bright green, let the salmon join the fun, just until it’s warmed. Make sure to say ‘thank you’ to the salmon. Seriously.

Rock salt and cracked pepper to taste, sprinkle some black sesame seeds on top for effect, and dig in, with appreciation and presence. Mmm-mm.
